Such a cool dessert – just a saving in the summer heat. This recipe I found in “Food network magazine”. Originally it was with raspberries, but I decided replace them with strawberries. I think you can use almost any fruits and berries to cook it. I suspect that with peaches or blueberries it also will be very tasty. For this dessert it is better to use small disposable plastic or paper cups.
Strawberry-chocolatte gelatin
Ingredients:
- strawberries - 3 cups + 9 more for topping
- sugar - 1 cup
- unflavored gelatin powder - 6 tsp
- cooking spray -
- half-and-half - 2/3 cup
- semisweet chocolate - 2 ounces, finely chopped
- whipped cream - for topping
Instructions:
Puree the strawberries with 3/4 cup of sugar. Leave 9 berries for decoration. Add 1/3 cup of water. Pour the mixture through a sieve into a small saucepan. Bring half of the strawberry puree to a boil over medium heat. Remove from heat. Sprinkle 4 tsp. gelatin over 1/4 cup cold water; let stand 1 minute. Stir in the hot strawberry puree, mix thoroughly well, add the remaining strawberry puree. Spray nine 5-ounce cups with cooking spray. Fill each cup about 3/4 full with strawberry mousse. Place in refrigerator for 45 minutes. Meanwhile, combine half-and-half and remaining sugar in a small saucepan, bring to a boil. Add the chocolate, reduce the heat. Cook stirring occasionally until mixture becomes smooth. Sprinkle remaining 2 tablespoons of gelatin in 1/2 cup cold water. After one minute, pour into the chocolate mixture and stir well. Pour chocolate gelatine mixture into the cups on top of strawberries gelatin. Place in refrigerator for 3 hours. Unmold the gelatin: invert the cups onto plates and carefully tear off the paper. Well, if your cups made of plastic - just punch the bottom with a sharp knife, and the it will slip very easy. Top with whipped cream and remaining berries.
