Savory Oatmeal with Fried Egg

Ingredients

  • rolled oats - 1 cup
  • water - 2 cups
  • salt - 1/4 teaspoon
  • olive oil - 2 tablespoon
  • butternut squash - 1 cup, peeled and cubed (1 inch)
  • chicken sausage - 1, sliced
  • soy sauce - 2 teaspoon
  • eggs - 2
  • sweet soy sauce - 1 teaspoon
  • chili flakes - 1/4 teaspoon, optional
  • green onion - 2 tablespoons, thinly sliced

Instructions

  1. Place the oats and water in a large pan over a medium heat.
  2. Bring to a boil, then reduce heat to low and simmer for about 20 minutes.
  3. Remove the pan from the heat and stir in 1 teaspoon of olive.
  4. Cover with a lid and let to stand for 2 minutes.
  5. Meanwhile, in a skillet heat 1 tablespoon of olive oil.
  6. Add the butternut squash. Cook over medium heat stirring occasionally for 6-7 minutes, then add the sliced sausage.
  7. Cook stirring until the squash is tender and the sausage pieces are fully cooked.
  8. Raise the heat to medium-high and add the soy sauce. Cook for 1-2 minutes until butternut squash is caramelized.
  9. Remove from the heat and set aside.
  10. In another skillet heat the remaining oil.
  11. Fry the eggs until almost cooked, then add the sweet soy sauce and cook another 30 seconds.
  12. Divide the oatmeal between two bowls.
  13. Top with the eggs and sprinkle with chili flakes and chopped green onion. Eat immediately.
