Savory Oatmeal with Fried Egg
Ingredients
- rolled oats - 1 cup
- water - 2 cups
- salt - 1/4 teaspoon
- olive oil - 2 tablespoon
- butternut squash - 1 cup, peeled and cubed (1 inch)
- chicken sausage - 1, sliced
- soy sauce - 2 teaspoon
- eggs - 2
- sweet soy sauce - 1 teaspoon
- chili flakes - 1/4 teaspoon, optional
- green onion - 2 tablespoons, thinly sliced
Instructions
- Place the oats and water in a large pan over a medium heat.
- Bring to a boil, then reduce heat to low and simmer for about 20 minutes.
- Remove the pan from the heat and stir in 1 teaspoon of olive.
- Cover with a lid and let to stand for 2 minutes.
- Meanwhile, in a skillet heat 1 tablespoon of olive oil.
- Add the butternut squash. Cook over medium heat stirring occasionally for 6-7 minutes, then add the sliced sausage.
- Cook stirring until the squash is tender and the sausage pieces are fully cooked.
- Raise the heat to medium-high and add the soy sauce. Cook for 1-2 minutes until butternut squash is caramelized.
- Remove from the heat and set aside.
- In another skillet heat the remaining oil.
- Fry the eggs until almost cooked, then add the sweet soy sauce and cook another 30 seconds.
- Divide the oatmeal between two bowls.
- Top with the eggs and sprinkle with chili flakes and chopped green onion. Eat immediately.
