Cottage Cheese with Baked Apricots

Guys. It’s me again, and I’m bringing to you one of my new favorite breakfast recipes. Just in time for the apricot season! It’s incredibly easy to make, and it’s very delicious. This dish can also be a healthy dessert option for those who’s trying to stay fit.

Those who know me good enough will tell that I have terrible dessert addiction. My common sense tells me to stop eating sweets, but every cell of my body craves for them. That’s the reason I’m constantly in a search for healthy dessert alternatives. These apricots is a complete success, especially when paired with some light organic cottage cheese. I eat this dish after my morning exercise to treat myself for a great workout. Absolutely love it!

Cottage Cheese with Baked Apricots

Prep Time: 10 mins
Cook Time: 30 mins
Yields: 4

Ingredients

  • big ripe apricots - 5
  • water - 1/4 cup
  • lemon juice - 1/4 cup
  • lemon zest - 1 stripe
  • vanilla paste - 1/2 teaspoon
  • bourbon - 1 tablespoon, optional
  • low-fat cottage cheese - 24 oz

Instructions:

  1. Preheat the oven to 375°F.
  2. In a small saucepan mix water, sugar, lemon juice, vanilla paste, bourbon (optional) and lemon zest.
  3. Bring the mixture to a boil and simmer over medium heat for 5 minutes.
  4. Cut each apricot in half and remove the pit. Arrange cut side up in a baking dish, cake pan and pie dish.
  5. Pour the syrup over the apricots.
  6. Put the baking dish in the oven for 25-30 minutes, or until the apricots are tender and starting to caramelize.
  7. Remove and let cool slightly before serving.
  8. Divide the cottage cheese among four bowls. Top each with warm apricots and drizzle with the syrup.

Tips:

• If picked very soft and ripe apricots, check for their doneness earlier. If they are a little underripe, they may need to bake a little longer.
