At Kali Restaurant in LA, you can get a dish of candied egg yolks. The restaurant cures raw eggs in sugar and salt, then serves them over gelato. To make sure the eggs are bacteria free, chef Kevin Meehan has the eggs sit in a refrigerated salt mixture for three weeks before serving them.

  1. idk, i wouldn't pay for just a single scoop of icecream with it shaved on top. i would try it, but i would feel kind of ripped off. i get that small portions are kind of a fancy-restaurant thing, but not even two??? smh

  2. people are talking about the yolks BUT DOES ANYONE NOTICE HOW SMALL THE PORTION ON GELATO ARE IN THE PLATE AND THE PLATE IS LIKE HUMUNGOUS

  3. In asia people eat salted eggs ALL the time and no one seem to be dropping off dead from salmonella. But I've never seen people cure eggs with sugar so I am all in for this, looks great 😀

  4. It hurts me when people are so negative about food such as these and yet they havent even given it a single bite….
