At Egghead in NYC, you can order a quesadilla served with a blanket of caramelized cheese. The executive chef of the restaurant, Jason Hall, found inspiration for the dish during a trip to Mexico. To make it, Chihuahua cheese is placed directly on the griddle until it caramelizes.

    (When quesadilla literally means cheese taco, if it had now cheese it would be a taco)
