APPLE CINNAMON MUFFINS:
2 cups rolled oats
1 cup applesauce
3 eggs
¼ – ⅓ cup maple syrup
¼ cup almond milk
1 tablespoon cinnamon
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon vanilla extract
½ teaspoon sea salt

Bake 15 minutes at 400°F (200°C).

EGG SALAD:
8 boiled eggs, chopped
1 cup cauliflower rice, raw or steamed
1/2 c chimichurri sauce
1/2 c plain yogurt
salt/pepper to taste

CHIMICHURRI SAUCE (From my Meal Prep Ignite Course):
1 cup parsley
½ cup cilantro
2 Tbsp shallot
1 garlic clove
2 Tbsp red wine vinegar
2 tsp capers
⅓ cup avocado oil, or light olive oil
salt and pepper for seasoning

LEMON GARLIC DIJON DRESSING:
⅓ cup olive oil (or avocado oil)
1 lemon, juiced
1½ teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon pep
1-2 tsp garlic, finely minced

  1. Tried the blender muffins and they are awesome. I used cupcake liners for easier cleanup but I won't do that again. They stick to the liner. Will grease naked pan just a Alyssia does in the video. Would LOVE more healthy blender muffin videos.

  2. love love love the ideas and the high energy meal prep, but I can't help noticing how much packaging waste there is, like the packs of broccoli and baby carrots instead of the fresh produce into a reusable bag

  4. Tip for those of you who have a hard time with boiled eggs. Get an instant pot! They come out perfect every time!

  6. I absolutely buy pre-cut veggies and cooked eggs, but I did have to chuckle at you moving the sweet potatoes into a glass jar instead of keeping them in their plastic.

  7. I think the very first thing you should do before all this, is track your portions. Write down what a good portion is for you, then you know how long a bag or box of something will last you.

  9. If I didn't see you make these muffins with the mixture being so wet, I would have thought that I had done something wrong. Amazing way to prepare them. (FYI Agree with comments about the camera work).

  10. I just made your apple oat muffins and I can't get over how delicious they are. I had an apple hanging around so I chopped it up and added it. I get all these sweet little apple bits inside yum. My husband who can eat anything and stay thin ate one and said they were great. Thank you so much for sharing. You have made such a big difference in my eating habits. I feel so much lighter in weight and spirit.keep doing what you do. You deserve a big hug.here it is X.
