Greek Fish Plaki

This receipe is by Jeff Smith the Frugal Gourmet. I always loosely follow receipes after I get to know them. Below is the exact receipe 3 Yellow onions chopped 3 cloves garlic crushed 3 tbsp olive oil 2 cups canned tomatos 1/2 cup chopped parsley 1 tsp oregano 1/2 cup red wine (extra for the cook) 2 pounds whitefish fillets Salt & Pepper 1 whole lemon slived thin Saute onions & garlic in oil for 5 minutes. Add tomatos, parsley, oregano and simmer for 10 minutes. Grease pan with oil place the whitefish in the bottem. Add salt pepper cover with the lemon. Top fish with cooked red sause and cover, Bake at 375 for 45 minutes.

Famous Italian Recipes Critically acclaimed (Gourmet, Los Angeles Times, Zagats,) Chef and protégé of Wolfgang Puck and Marcella Hazan, Joe Venezia owns and operates the popular and very authentic Il Boccaccio on the Promenade in downtown Hermosa Beach.

Following graduation from the Culinary Institute of America (Hyde Park, NY class of 78), Venezia was brought in as sous chef to the soon-to-open Mansion on Turtle Creek in Dallas, where he was to work with former CIA classmate, Dean Fearing. Impressed with Venezias style, the hotels management company brought Venezia to Los Angeles as Executive Chef of the exclusive BEL AIR HOTEL, where he enjoyed a popular seven-year reign. While in Los Angeles, Venezia teamed up with Chef Wolfgang Puck, revamping menus and putting his mark on establishments such as DELICIAS in Rancho Santa Fe, MASONS in Brentwood and the newly renovated HOLLYWOOD ROOSEVELT HOTEL.

When Marcella Hazan got wind of Venezias talents, she hired him to head up her new kitchen at VENI, VEDI, VICI in Atlanta. Prior to opening, she whisked him off to Venice and Bologna, Italy, where his skill with Italian cuisine was fine-tuned. Eventually, California beckoned him back, this time, to turn the somewhat floundering I.Cugini in Santa Monica into a credible success. Since 1994, Venezia has owned Il Boccaccio, close to his home on the Palos Verdes Peninsula, where he oversees his organic garden of specialty produce for his restaurant.

Venezia has appeared on numerous televised cooking programs and has been praised by the likes of Gourmet Magazine, the Los Angeles Times, Food and Wine and the Zagat Survey. His recipes have been featured in popular cookbooks, and he and his wife, Carla, write a regular food column for Vision magazine. The Venezias have four children.

Sweet Potato Casserole with Marshmallows — The Frugal Chef

Sweet potato casserole with marshmallows is as American for Thanksgiving as stuffing. It is truly traditional and absolutely delectable. It could be served as dessert but I can promise you that it will compliment a meal beautifully.

I like to enhance my sweet potato casserole with spices such as cinnamon, cloves and nutmeg. This makes it aromatic and comforting as well. I also like to add orange juice and zest to cut down on the sweetness a bit. The type of cream that I use is heavy cream. However, you can use whatever cream you want. Even sour cream would be great in this!

Serves eight
4 cups mashed sweet potatoes
¼ cup cream
½ cup brown sugar
2 tablespoons unsalted butter at room temperature
1 teaspoon vanilla
½ teaspoon orange zest
Juice of ½ large orange
½ teaspoon cinnamon
¼ teaspoon nutmeg
Pinch ground cloves
2 to 3 cups marshmallows – depending on the size

• Preheat oven to 375 degrees.
• Mix all ingredients, except for marshmallows, in a bowl.
• Spread sweet potatoes in a buttered baking dish.
• Sprinkle evenly with marshmallows.
• Place in oven and bake for 35 minutes until marshmallows are browned.
• Serve

Candied Walnuts Recipe — The Frugal Chef

Candied walnuts can be eaten as a sweet and crunchy snack but are mostly popular as an addition to salads. They are very easy to make as well.

I do not add anything but sugar to my walnuts. I find that all you need to do is allow the sugar to melt and coat the walnuts for a nice result.

1 cup halved walnuts
½ cup granulated sugar

· Place walnuts and sugar in a skillet. Cook, shaking pan frequently, until sugar melts and
starts caramelizing. Make sure to coat walnuts well. Remove from heat and cool down.
· Use as a topping for salads.

Philly Cheese Steak Recipe — The Frugal Chef

This Philly cheese steak recipe is my version of this wonderful and delicious meal. It is easy and very good.

We used to make these sandwiches at the deli in Meredith, NH a few years ago an they were a hit. I called this a Philly steak and cheese sandwich in the video and have gotten a lot of heat for this because I am not using rib eye steak or Cheeze whiz. No offense to anyone but the truth is I have never used this particular product. If I am going to use cheese it is going to be the real stuff.

You will also notice in the video that I am not using bell peppers as my husband hates them. You can go ahead and add them if you would like as I tell you in the recipe. This is a great tasty and frugal sandwich.

For six subs you will need:

1.5 pounds beef loin top sirloin steak, very thinly sliced
2 tablespoons butter
2 yellow onions, finely sliced
1 green bell pepper, finely chopped (optional)
1 teaspoon garlic powder
8 slices Provolone cheese
Olive oil
Salt & Pepper
2 Baguettes or 6 sub rolls

Melt the butter and some olive oil in a large skillet. Add the onions and cook, stirring occasionally, until caramelized and browned.

Move the onions to the sides of the pan and add the meat in the middle. Fry, separating the meat with a spatula, until meat is fully cooked – about 5 minutes. Mix the cooked steak with the onions. Place the cheese on top of the meat. Allow the cheese to melt.

Toast the baguettes if wanted. Cut them into desired size, cut open the middle without cutting completely through to the other side and fill with the steak and cheese. Serve.
