How to Fry an Over Easy Egg ~ Kitchen Basics ~ Ft. Marquette Castings Carbon Steel Skillet

Today I am sharing the most basic of kitchen basics! How to properly fry an over easy egg. I really want to help people understand the simple basics of cooking. If you can cook an egg, you eat. If you can make toast, you eat better! I think you know where I am going with that. To make this even more exciting, I have partnered with Marquette Castings, a Michigan based, American owned company that forges these amazing carbon steel skillets that are simply impeccable! While you can cook your eggs in any skillet, this skillet is a true joy. I was totally blown away by the quality craftsmanship of this beauty!

Carbon steel has a lot in common with it’s cousin cast iron, so if you are a fan of cast iron, like I am, you will definitely be a fan of carbon steel. They are very similar with a couple of exceptions. Cast iron is poured, from a liquid state into a mold, then cooled and unmolded and it is porous and takes on the texture of the mold it was poured into. Carbon steel is made from similar material but it is formed from a sheet of rolled metal into the skillet you see me using today. It’s handle is riveted on by hand and the surface treated with flax oil and baked on. It is ready to use when you get it home.

I received this skillet today. I made this video today and I used it for the first time on this video. Frying an egg was an absolute joy. I do not like frying eggs in cast iron. Especially brand new, lightly seasoned cast iron. It is nearly impossible to get a good fried egg out of one of those. As you can see these over easy eggs slid around the pan and released very well. I was totally impressed!

The secret to frying an over easy egg is to not do it over high heat. Many want to do things fast and hot, this is not the time for that. Medium heat is perfect. We used an induction burner set at 210 to 220 degrees to achieve this. Melt some butter. Crack the egg and release it low over the pan. This will help keep the yolk in tact. Then let the heat do the rest. When the egg begins to bubble and the white is completely opaque, use your thin spatula, we like a “fish slice” and quickly slide the edge under the yolk and then gently turn the egg over. At this point your egg will only need a few seconds to complete cooking. Then flip it back and remove to a plate.

Now you know you know how to cook an over easy egg. If you like your egg nice and runny only cook the second side for about 10 seconds. If you like it more cooked or “over medium” allow it to cook for 20 to 30 seconds. This makes the yolk a little more firm, but still runny enough to dunk your toast into.

You can truly cook an over easy or any sort of egg in any skillet that you like. This carbon steel skillet from Marquette Castings in the Rolls Royce of skillets. I have used a lot of cookware in my day. From very fancy top of the like French cookware in the restaurant kitchens early in my career to good quality American made cookware in my own home kitchen. This skillet will rival just about any that I have used in my life. I am not exaggerating. It really is that good!

As you would expect. A piece of quality craftsmanship will also have a price commensurate with it’s worth. So while this may not be in everyone’s budget, it is well worth it for the foodie and connoisseur of fine kitchen equipment. It would be a lovely treat for a wedding, birthday or graduation gift. Definitely it is the gift of longevity. This skillet will last generations if well cared for and could easily be handed down as a family heirloom from parent to child to grandchild.

How to Make Brownies

Hi Guys, today I’ll show you How to Make the Perfect Brownies. For me, it’s everything I want in a brownie. PRINT RECIPE: These are fudgy, chewy, cakey, all in one – tastes close to the texture of a boxed brownie but with more deep chocolate flavor. It’s a very simple recipe and can be made very quickly. And that’s what you want when you get a craving for brownies, you want to eat it right now! If you want to print the recipe, it’s on my website, and I’ll leave a link below the video.
We’ll need 6 ounces or 170g of semisweet chocolate chopped (you can buy the chunks or chips). 1 stick, 4 oz or 113g of unsalted butter. 1 cup 7oz or 200g of white sugar, 3 tablespoons or 20g of unsweetened cocoa powder, 3 eggs, ¾ cup or 110g of all purpose flour, ½ tsp baking powder, ½ tsp salt and 2 tsps vanilla extract. This is ½ tsp of instant espresso powder, it heightens the chocolate flavor. If you have don’t have it, it’s fine to leave it out.
Heat your oven to 350 degrees Fahrenheit or 180 degrees celsius. Heat water in a saucepan. When it simmers, put a bowl on the pan, the bottom of the bowl should not touch the water. Add the chocolate and butter. Stir occasionally and let it melt. When it’s almost melted, add the sugar and mix. You want the sugar to melt into the chocolate mixture. Another minute and the sugar will be melted. Now the mixture is smooth and glossy. Remove the bowl from the heat. Add the cocoa powder, eggs one at a time making sure they’re incorporated well, vanilla extract, salt. Mix the baking powder into the flour. Add the flour in thirds and mix well. Here is our thick, shiny brownie batter which will make thick and shiny brownies. Use an 8×8 square metal baking pan. I buttered the pan and then put parchment paper on top. Butter the parchment paper. The paper makes it easier to pull out the whole thing and cut on a board. If you don’t have parchment paper, you can just butter the pan well. Pour the batter in. Even it out. Bake for 25 minutes. Depending on your oven, it may take a few minutes less or a few minutes more. The brownies are done when you insert a toothpick and it comes out almost clean, with a little bit of brownie clinging to it. It shouldn’t be wet but thick and fudgy. See those classic, crackly lines. These brownies have that very thin almost crispy layer on top that you expect from a good brownie. Now the hardest part, waiting for it to cool completely. Now the brownies are completely cool, lift them out of the pan. You’ll get 16 small pieces or 9 big ones. Use a paper towel or cloth to wipe your knife in between cutting. Shiny, when you bite into the brownie, you get a thin crispy layer on top, it’s fudgy, chewy, cakey all in one. It’s very close to the boxed brownie texture but with really good chocolate flavor since we used good chocolate. I have to warn you, they’re addictive. I always tell you to try my recipes but if you’re on a diet, do not make these! Otherwise, make this easy recipe and you won’t regret it because they’re so good.

Plant Family: Myristicaceae
Origin: Native to the Banda Islands in the Moluccas (or Spice Islands) of Indonesia.

– Nutmeg is the seed, and Mace is the aril that covers it.
– Nutmeg grows inside a Drupe that splits open and reveals the Aril around the seed. The Aril is removed (mace) and them the seed is split open to reveal the actual nutmeg.
– Nutmeg is not a nut and does not pose a risk to people with nut allergies.

– Around the early 1600’s nutmeg became an expensive in demand spice in Europe and was the root of conflict that pitted the Portuguese and the Dutch (who controlled trade ) against the English and French who wanted to obtain fertile seeds for transplantation.
– Because of this the nutmeg trees and seeds were closely guarded and those sold whole were dipped in lime to prevent them from being planted elsewhere.

– Nutmeg and Mace are used everywhere in Savoury and sweet dishes. It’s sprinkled on veggies, put in haggis and pumpkin pie.

– Whole nuts are preferable to ground nutmeg, as flavour deteriorates quickly. Whole nuts will keep indefinitely and can be grated as required.

– Mace works especially well with milk dishes like custards and cream sauces.
– It enhances and accentuates other spices.

– Mashed potato and other root vegetables can be given an incredible lift with nutmeg.

5 Ingredient Oat Pancakes
(serves 1)
1/4 cup oat flour (made from Bob’s Red Mill gluten free rolled oats).
1 medium ripe banana
1 egg
1 tsp vanilla extract’
pinch sea salt
coconut oil spray for cooking.
On a non stick skillet on med-high heat, cook for 2-3 min/side until golden.

Sliced banana
raw sunflower seeds
maple syrup

Breakfast Tostadas
(serves 1)
1 egg
1 small white corn soft tortilla
1/2 tbsp Bob’s Red Mill nutritional yeast
2 tbsp refried beans from can
Coconut oil spray for cooking

1/4 ripe avocado sliced
1 tbsp salsa

Raspberry Almond Butter Chia Toast
(Serves 1)
2 slices multigrain or Ezekiel bread
1-2 tbsp salted almond butter
1/2 cup fresh raspberries
