Mile High Pie



You’ll Need:

NUT CRUST
1/2 c butter, melted
1/2 c brown sugar
1 1/2 c flour
1/2 c chopped nuts

FILLING
5 oz frozen strawberries, thawed
1/2 T lemon juice
1/2 c sugar
1 egg white
1/2 c cool whip

Preheat oven to 325.
First, make the nut crust since it takes the longest.
In a bowl, combine butter, brown sugar, flour, and chopped nuts.
Mix until a gooey ball forms, then press it into a baking dish.
Spread out the mixture until it is flat. Then bake it for 15 minutes.
After 15 minutes, let the crust cool just a little bit.
Using two forks, break up the crust into little balls. Let it cool completely, then press into the baking dish until it is smooth. (You might need to ask your adult assistant to help with this part since the baking dish will be hot.)

While the crust is cooling, start the filling.
You’ll want to use a stand mixer if you have one because this has to stir for 15 minutes.
In the mixing bowl combine the strawberries, lemon juice, sugar, and egg white.
Mix on low for 12-15 minutes. You’re really looking for the mixture to get fluffy and stiff.
Once that happens, add the cool whip and mix just a few times until it’s blended.

Finally, pour the fluffy mixture into the nut crust and spread out into all corners of the baking dish.
Put the dish in the freezer overnight or for at least 8 hours.
It’s a yummy way to celebrate the beginning of summer break!

Chocolate Dipped Strawberries Healthy Gourmet Decadent Delicious!



How would you like to eat gourmet chocolate dipped strawberries that are actually healthy for you. Now you can with my Organic Chocolate Dipped Strawberry Himalayas- Mountains of Delicious Decadent Healthy Ingredients.

6 Large Organic Strawberries Washed
1 square of Trader Joe’s Organic Dark Belgian Chocolate
1 teaspoon of YS Organic Honey
Melt chocolate in double boiler or microwave add in the honey. Place strawberries in chocolate mixture 1/2 way to 3/4 way up. Place. dipped strawberries in cupcake wrappers.
Top with Organic Healthy Toppings
Organic Pumpkin Seeds, Organic Chia Seeds, Organic Coconut, Organic Kamut Puffed Cereal (ArrowHead Mills), Organic Pistachios, Organic Frozen Pomegranates
Place on a plate in freezer 15 minutes to 1/2 hour to set up open faced .They will be cold not frozen. These are different than what you are used to they are served cold. Think of the cold Snow capped Himalaya Mountains.

RECIPE DESCRIPTION:
INGREDIENTS:
(SERVES 6-8)

2 Lb fresh or frozen yuca (cassava)
Vegetable oil
½ tablespoon salt

DIRECTIONS

1. In a large pot cover the yuca with water, add salt and bring to a boil, reduce the heat to medium low and cook about 15 to 20 minutes or until is tender. I usually use pressure cooker to steam Yuca faster.
2. Remove the yuca from the water and pat dry with paper towels. Cut the cooked yuca into ½ — inch strips.

3. Fill a large frying pan with enough vegetable oil to 350° F. When the oil is hot, place the yuca into the heated oil carefully. Fry them until golden brown on both sides about 6 to 8 minutes.

4. Remove the yuca pieces from the oil using a slotted spoon and drain on paper towels. Sprinkle with salt and serve.

Frugality gets a bad rap.  I’m guessing that it’s because being frugal is often confused with being a miser.  You know, those people who won’t spend money on anything.  Those people who drive 5 miles out of their way to get gas for 3 cents less per gallon.  Those people who take their dates to a restaurant during half price happy hour and will only let the date order appetizers.  You know the ones.
Then, there is also the misconception that frugality doesn’t matter.  Some bloggers are notoriously anti-frugality and argue that saving a little money here and there really doesn’t matter.  Instead, they’re proponents of growing your income so you don’t have to pinch pennies.
