Cooking Fish In Beer & Garlic @ Home (Chinese Style Recipe)

Welcome to my Asian kitchen. My name is Xiao Wei and my goal is to make your kitchen simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Chinese recipes.

500g White Fish Fillet
6 Cloves Garlic
250ml Beer
1 Spring Onion
10g Ginger
½ Tsp Ground White Pepper
½ Tsp Sugar
1 Tbsp Cooking Wine
1 Tsp Dark Soy Sauce
50g Plain Flour
Salt to Taste

1. Finely chop spring onion, ginger and garlic
2. Cut fish into 1 inch chunks and place into a mixing bowl
3. Add salt, cooking wine, white pepper, spring onion and ginger. Mix well and leave to marinate for 10 minutes
4. Place plain flour on a plate, press fish chunks one piece at the time onto the flour – ensure fish evenly covered with flour
5. Heat half litre of oil in the wok
6. Place fish one piece at the time into the wok, deep fry for 3 minutes till golden
7. Leave about 1 Tbsp of oil in the wok and discard the rest
8. Add the garlic into the wok and fry for few seconds
9. Add the fish, beer, soy sauce and sugar. Bring to the boil
10. Cover the wok and cook fish for 5 minutes till the liquid is thickened
11. Transfer onto a dish, garnish with spring onion or coriander and serve
